Cured duck liver with Muscat, nashi pear salad, bacon brioche,

red vein sorrel


Tortellini of lobster, sauté spinach, tomato, basil, lobster bisque

& caviar


Roasted Fillet of Shrewsbury beef, ceps, roasted onion purée, marrow

& truffle sauce


Fillet of wild sea bass, poached langoustines, garlic gnocchi,

celeriac velouté


Twice baked gruyere cheese soufflé, pickled pear

& walnut salad


Assiette of caramelised lemon & white chocolate tart, blackcurrant & vanilla parfait,

salted caramel choux with vanilla ice cream
